I would like to be able to keep a text version of the address bar visible at all times and be able to dock it in a toolbar somewhere.

You can place the path info in the titlebar: Tools->Settings->View->Main window title. This way you can always see the current folder path, in the windows taskbar, even when FC is minimized.

Thanks, but I more meant an address bar that you can actually click in and use, like the one in XYplorer.

I'm not too sure if I got your problem correctly but I'll give a try:
address bar is divded into upper part and lower part, you might try to click the upper half for your needs
