What kind of sort order does FC apply by default to signs like
and can it be changed to some other or maybe even set precisely on a sign-by-sign basis by a user to own liking?

You can chose between 3 options in Settings - View - File/folder list - Sorting.

So, the options are very limited - and inadvertently also inconsistent with other programs
