See attached the gif of the quick search getting typed in. The font is hard to make out.
I've tried this setting but the font colour doesn't change.

Confirmed in 859 donor 64-bit and 856 32-bit public beta, Windows 10 21H1 64-bit.
I think it's a bug.
First, after changing the background and font color for quick filter, the colors are NOT changed for quick search, you need to restart FC, after the restart background color from quick filter setting is used for quick search, but font color is NOT used, so if that setting, or color scheme use similar background as font quick filter, it looks bad / unreadable.
Moved to Bug reports.

That was my first guess but I then thought I missed a setting elsewhere.

Here are the screenshots with Dark grey flat default color scheme:

In older versions white background was used, in the newer versions background from quick filter setting is used, but not the font, so it's causing these problems, also in other existing color schemes.
In some color schemes it's even worse, e.g. Very dark grey flat, in 859:

Solution is to use also font color from quick filter setting in quick search.
Workaround is to use other background for quick filter setting.
